  1. Preheat oven to 180°C and line two baking trays with baking paper.
  2. Put icing sugar into a bowl and set aside.
  3. In a separate bowl sift together the flour, cocoa powder, baking powder and salt. Set aside.
  4. In a large bowl using an electric mixer on a medium speed, beat the butter and sugar until creamy (approx 3 minutes).
  5. Add one of the eggs and and beat until combined, then add the second egg and the vanilla extract and beat until combined.
  6. Gradually add in the flour mixture and beat on a low speed until everything is combined.
  7. Roll the dough into balls using about 1 tablespoon of dough for each cookie. (If the dough is too wet to roll into balls add some more flour).
  8. Roll the cookie dough balls in the icing sugar until they are completely covered and place them on the baking paper about 2 inches apart.
  9. Bake for around 10-12 minutes, until the cookies have puffed and crackled on top.
  10. Cool on a wire rack for 10 minutes.
  11. Repeat until all the cookie dough has been used, makes roughly 25 cookies.
